Matching Wine & Cheese

 
 


Enhance the pleasure of drinking a great wine by accompanying it with a complimentary cheese. The choice of which wine and cheese to pair can be based on one's personal choice however there are some guidelines you can follow that will help you appreciate and savour these two aged and fermented foods.

1. Soft and milder cheeses like mozzarella are best with a dry white wine or a light red wine. You want to be sure to match the subtle flavours of the cheese with the delicate flavours of the wines.

2. Rich blue cheeses are best with naturally sweet wines such as a port. This is a marriage made in heaven! Icewines can also work well since they balance out the saltiness of the cheese.

3. Depending on personal taste, mouldy cheeses may also be accompanied by a dry red wine or a full-bodied white.

4. Strongly flavoured cheeses such as chedder need to be accompanied by full-bodied wines.

Here are some pairing suggestions:

  • Try Asiago with Cabernet, Merlot or Valpolicella
  • Gorgonzola with Port, Marsala, Pinot Nero or Chardonnay
  • Grana Padana with a Chardonnay or Spumante
  • Fresh Montasio with a Pinot Bianco or Tocai Friulano or more aged Montasio should be paried with a Chianti, Merlot or Refosco
  • Pecorino goes well with a Chianti, Marsala or Refosco
  • Provolone can be paired with Carbernet or Sangiovese
